I found a delightfully easy and yummy recipe for Devils food cake included in the mystery novel by Josi S. Kilpack. (She has many fun recipes in all her mystery novels)
Devil's Food Cake
1 cup sour milk (1 cup milk plus 2 tsp lemon juice)
2 cups flour
2 cups sugar
2/3 cup unsweetened cocoa
1/2 tsp salt
2 eggs
1 cup vegetable oil
1 tsp vanilla
1 cup boiling water
1 tsp baking soda
1 tsp baking soda
In large bowl whisk all ingredients except the water and baking soda. Mix until batter is smooth. Add the soda to the boiling water, stir, then add to batter. Mix well--batter will be thin.
Pour batter into a greased and floured 9X13 pan and bake at 350 degrees for 40 minutes.
Chocolicious Frosting
1/2 cup butter
3/4 cup baking cocoa
6 oz. cream cheese
2 cups powdered sugar
1 tsp vanilla
1 or 2 drops of peppermint essential oil (optional, but so yummy)
nuts and chocolate curls or chips for fun
Mix butter and cream cheese which have been softened at room temperature with whisk until well blended. Add cocoa and whisk until blended. Then add powdered sugar until well blended. Finally, the vanilla, drop of peppermint oil, nuts, and whatever else sounds yummy.
Frost cooled cake.
All can be done with a whisk. Fast to throw together, but very festive and as successful as any cake mix!!
