Easiest Yummiest Devils Food Cake

I found a delightfully easy and yummy recipe for Devils food cake included in the mystery novel by Josi S. Kilpack. (She has many fun recipes in all her mystery novels)

Devil's Food Cake
1 cup sour milk (1 cup milk plus 2 tsp lemon juice)
2 cups flour
2 cups sugar
2/3 cup unsweetened cocoa
1/2 tsp salt
2 eggs
1 cup vegetable oil
1 tsp vanilla
1 cup boiling water
1 tsp baking soda

In large bowl whisk all ingredients except the water and baking soda.  Mix until batter is smooth. Add the soda to the boiling water, stir, then add to batter.  Mix well--batter will be thin.
Pour batter into a greased and floured 9X13 pan and bake at 350 degrees for 40 minutes. 

Chocolicious Frosting
1/2 cup butter
3/4 cup baking cocoa
6 oz. cream cheese
2 cups powdered sugar
1 tsp vanilla
1 or 2 drops of peppermint essential oil (optional, but so yummy)
nuts and chocolate curls or chips for fun

Mix butter and cream cheese which have been softened at room temperature with whisk until well blended. Add cocoa and whisk until blended. Then add powdered sugar until well blended. Finally, the vanilla, drop of peppermint oil, nuts, and whatever else sounds yummy.
Frost cooled cake.

All can be done with a whisk. Fast to throw together, but very festive and as successful as any cake mix!!

Harvest Whole Wheat Cookie Bars

Harvest Whole Wheat Cookie Bars
(recipe by sallybee)

Cream together:
1/4 cup butter
1/4 cup peanut butter
1/2 cup unsweetened applesauce
 1 cup white sugar
1 cup brown sugar
2 T water
1 tsp. vanilla
2 eggs
Add:
2 cups whole wheat flour
1/2 tsp. salt
1 tsp. baking soda
1 cup oats
2 cups chocolate chips
1 cup chopped walnuts

Mix well. Pour onto greased cookie sheet.
Bake at 375 degrees for 11 minutes.

Yummiest, Easiest and Fastest Homemade Buns

These yummy sandwich/hamburger/hot dog buns are so Easy!
Original recipe at allrecpes.com - My version found below
Heat 1 cup milk plus 1/2 cup water in microwave 1 minute
Add 1/4 cup butter or olive oil and let sit
Put in mixing bowl and stir together
  3cups whole wheat flour
2 Tablespoons sugar
1 and 1/2 teaspoon salt
1 Tablespoon plus 1 teaspoon yeast
Add warm (but not hot) milk mixture to flour mixture
  stir to mix
add 1 slightly beaten egg
2 tsp. lemon juice or dill pickle juice or vinegar (optional)
Can mix in kitchen aid while adding
  1and 1/2 cups white flour
knead 8 minutes in kitchen aid or by hand
Let set a few minutes or up to an hour
Form into 12 sections or balls
flatten and form into buns
let rise about 20 minutes
Bake at 400 for 12 minutes
Yummy and easy - no fail!! Stays fresh for 3 days if they last that long.
Why buy buns when they are so wonderful homemade?!

Clam Chowder

I served this to Dearheart a few weeks ago when it was chilly.
(Yes, we did have a few chilly October days here in the valley of the sun)
Recipe created from several I researched.
Clam Chowder
Chop and saute in 1/4 cup butter:
1/2 cup mushrooms
1 cup celery
1 cup onion
1 cup carrots
2 cups potatoes 
Add 2 quarts very hot water and clam juice
Simmer for about 20 minutes
Mix 1/4 cup  flour in with 1 can of canned milk and 1 T vinegar
Add to simmering veggies
Add drained clams (one can is enough)
Can add bacon bits if desired
Season with salt and pepper
Delicious

Hearty Harvest Bread

Delicious whole wheat bread for a chilly fall day 
(with a hint of cinnamon and holidays to come)!!
Hearty Harvest Bread
Stir together in kitchen aid:
2 1/2 cups of warm water
3 Tablespoons honey
5 Tablespoons olive oil
1 1/2 teaspoons salt
1 Tablespoon sour pickle juice (or lemon or vinegar)
2 Tablespoons yeast
2 eggs
Add:
5 cups whole wheat flour one cup at a time - beat until smooth
Add: 1/2 cup each: raisens, nuts, oatmeal, apple pieces cut small
1/2 tsp. cinnamon
Add: 2 to 3 cups white unbleached flour until thick enough to hold shape
Knead in kitchen aid for 8 minutes
Let set an hour or two
Form into 3 loaves and place in loaf pans
preheat oven to 400 degrees
let bread rise until doubles as oven is heating
Bake for 30 minutes
Absolutely delicious!!

Coconut Milk Blender Treat

This delicious treat is Sallybee's Kreation 
Blend together:
1 pint coconut creamery type milk
1 banana
frozen strawberries
frozen blueberries
frozen rasberries
1 tsp. vanilla
(if eaten immediately it does not need sweetening, but if frozen to eat later, may need sweetening to taste)

4th of July Cake

This is a super fun cake to serve on any national holiday.
I used a spice cake recipe, but any cake recipe would work.
The fun is in the decorating:
1 small container of whipping cream whipped to soft peaks
add 1/3 cup powdered sugar and whip to firm peaks
add 1 tsp. vanilla
(can use a container of cool whip instead)
Spread on cake
Add blueberry stars and strawberry stripes
